This exceptional beef comes from pedigree Wagyu cattle raised at Freedown Hills, a prestigious farm in the heart of Yorkshire, England. Bred from Japanese Wagyu lineage and nurtured in the vast, green landscapes of the British countryside, these cattle produce meat with a perfect balance of bold red meat flavour and smooth, mellow fat.
What truly sets this Wagyu apart is its unique olive feed, developed with inspiration from Shodoshima in Japan. Introduced during the final fattening phase, this custom blend imparts a remarkably clean, delicate sweetness to the fat, with no heaviness or aftertaste. The aroma is refined and elegant, making this beef especially suited to simple preparations where the quality of the ingredient shines.
