This exceptional wagyu comes from Freedown Hills, a prestigious farm set in the lush countryside of Yorkshire, UK. Since 2019, they have been raising a unique crossbreed of Japanese and British cattle using their own feeding techniques and free-range grazing on vast pastures to nurture both health and flavour.
What truly sets it apart is their olive-based feed, inspired by the traditional methods developed in Shodoshima, Japan. By incorporating olives into a specially blended feed, the beef develops a refined aroma, a clean, elegant fat, and a delicate sweetness that lingers gently on the palate.
Grilled on a hot plate or over open flame, the zabuton turns crisp and aromatic on the outside while staying juicy and flavourful inside. Compared to the richness of traditional A5 Japanese wagyu, Freedown Hills wagyu stands out for its clean finish and depth of flavour, delivering an experience that is both satisfying and remarkably light.
