This outstanding cut of chuck roll has been hand-selected by Chef Fumiya Kase, whose Tokyo restaurant L’orgueil has been awarded a Michelin star for seven consecutive years.
Chuck roll is renowned for its ideal balance of lean meat and fat, offering just the right amount of bite with a juicy, satisfying texture. When grilled over a flame or cooked on a hotplate, it develops a beautifully crisp exterior while remaining tender and succulent within. With each bite, the rich, savoury flavour of the meat gently unfolds, accompanied by a refined, mellow sweetness from the fat. And yet, the finish remains clean and light, making it a pleasure to enjoy to the very last slice.
The beef is sourced from Freedown Hills, a distinguished farm in Yorkshire, England. Since 2019, this farm has raised a unique crossbreed of Japanese Wagyu and British cattle, nurtured on expansive pastures using a bespoke rearing method. Drawing inspiration from Japan’s Shodoshima region, the farm incorporates olives into the cattle’s finishing feed — a method that enhances the aroma and brings out a superb quality in the meat.
This exceptional Wagyu earned Gold at the 2024 World Steak Challenge, a testament to its global excellence. Unlike the intensely marbled A5-grade Japanese Wagyu, Freedown Hills Wagyu is distinguished by its deep, rounded flavour and clean, elegant finish.
