Hideki Hiwatashi - Executive Head Chef
Hideki Hiwatashi, who earned two Michelin stars as head chef at the long-established Kyoto restaurant Roan Kikunoi, brings to WASO an indispensable sensibility—one that cherishes the delicacy of Japanese cuisine and the beauty of the changing seasons.

Fumiya Kase - Head of Food Innovation
Fumiya Kase, owner-chef of L'orgueil in Aoyama, has been awarded one Michelin star for seven consecutive years. He joined WASO full-time in 2025 and is currently leading the development of new products. With a unique approach that blends French and Japanese sensibilities, he continues to elevate the flavors of WASO.
