Chef Fumiya Kase, owner of the renowned L’orgueil in Tokyo’s Minami-Aoyama, earned a Michelin star for seven consecutive years. His signature handcrafted Wagyu Hamburg steak is meticulously prepared by the chef himself, one by one, with exceptional care and skill.
Made using 100% Wagyu beef, it offers a rich umami flavour and a plump, juicy texture. The beef is double-minced, refining the meat fibres to create an exceptionally smooth mouthfeel that melts delicately on the tongue.
The addition of sweet, slow-caramelised onions, Wagyu beef fat, and a gentle Wagyu broth brings out the natural depth and savouriness of the beef. Though simply seasoned, the flavour is satisfyingly rich and well-rounded.
When cooked, the exterior crisps to a golden brown while the inside remains tender and moist. Every bite releases juicy flavour, delivering an effortless yet professional-quality experience at home.

<Fumiya Kase’s Recommended Cooking Method - Medium>
1. Defrost in the fridge; do not allow it to come to room temperature.
2. Sear both sides with some oil over medium heat until browned.
3. Turn off the heat and flip the patty.
4. Let it rest for 2.5 minutes on a pan, flip again, and rest the other side for another 2.5 minutes.
Adjust cooking time according to your preferred doneness.
