“Kotoho” Special Handmade Soba Broth (Only Broth)
Layering Hokkaido kelp with bonito flakes, soda bonito, dried sardine, dried horse mackerel and mackerel flakes, this Kotoho Special Handmade Soba Broth is crafted to bring fullness, fragrance, and depth to every bowl.
Born into a long-standing soba family in Arima and now refining her craft at the Michelin-listed restaurant Shitennoji Hayauchi, the soba artisan behind this broth developed it to harmonise beautifully with her own handmade noodles.
The natural umami of each ingredient is slowly drawn out, with no artificial seasonings used at any stage. Multiple varieties of dried fish intertwine with the clean, rounded flavour of kelp, creating a broth with a mellow yet layered depth.
When served hot, a gentle roasted aroma rises softly, filling the palate with warmth. Poured cold, it becomes a clear, refreshing broth perfect for chilled soba.
A bowl made with this broth gently embraces handmade soba and brings forward its quiet, genuine charm — the signature tenderness of “Kotoho”.
