Kayanoya Soba Noodles 200g
Our buckwheat flour is a unique blend centered on hikigurumi-ko (whole-ground buckwheat). These noodles have a wonderfully smooth texture and cook up to taste just like freshly made nama (raw) soba.
Aromatic soba that tastes as fresh as if it were just made.
This is a slender Shinshu-style soba made from 80% domestic buckwheat flour and 20% domestic wheat flour. Our custom-blended flour is centered on hikigurumi-ko, where the entire buckwheat kernel (excluding the hull) is stone-ground, resulting in exceptionally aromatic noodles. It is characterized by its fresh flavor, firm koshi (al dente) texture, and smooth feel. Enjoy this authentic, high-quality soba easily at home. This soba also produces a rich sobayu (the hot water the soba was cooked in), which we highly recommend mixing with your dipping sauce to drink after your meal.

For soba dipping sauce, we also recommend our crisp and fragrant Edo-mae Soba Tsuyu,
which enhances the aroma of the noodles.
It combines a rich bonito dashi with urume iwashi (round herring), roasted flying fish (ago),
and naturally brewed soy sauce.

Cold dipping sauce: dilute 2–3 times
