Harami, or bavette, is a rare cut where robust, flavourful lean meat meets delicate marbling. These cattle, descended from both Japanese wagyu and British breeds, are raised freely amid the lush countryside of Britain. This upbringing gives the meat a clean, elegant finish and a depth of flavour that makes it perfect for yakiniku.
Grill it over a hot plate or barbecue and you’ll enjoy a charred, aromatic crust that gives way to a juicy centre. Despite its richness, it remains light on the palate, so you can savour every bite right to the end.
