Delicate rice vermicelli from Hsinchu, Taiwan. Fine strands that take on broth beautifully with a gentle rice sweetness. To cook: soak in cold water for 1–2 minutes until softened, drain and heat in a pan, or cook directly in hot soup until your preferred texture.
