A Hong Kong home-cooking and resutaurants staple. It seasons stir-fries, fried rice and chow mein, blanched greens, steamed chicken or fish, marinades for fried foods, and even as a dipping sauce for dim sum. The flavour profile combines a soy-based savoury depth with a clean chilli heat, a gentle sweetness and a light tang, bringing instant definition to dishes. Typical usage: 1–2 tsp for a 2-portion stir-fry, 1 tsp to finish soups or noodles, and 1–2% of ingredient weight for marinades. Try a drizzle to finish si yau wong chow mein, for beef-and-pepper stir-fry, wok-tossed lettuce, tomato-and-egg scramble, over steamed fish with hot oil, or as a dip for dumplings and spring rolls.
