Nagasaka Sarashina Nagasaka Sarashina

More than 230 years ago, at the beginning of the Kansei era, the first Nunoya Tahee raised the sign of “Shinshu Sarashina Soba – Nunoya Tahee” in Azabu Nagasaka, Edo, marking the origin of the establishment.
Prior to this, Nunoya Seisuke, a merchant dealing in fine textiles, had been invited by the feudal Hosokina family to reside within their Edo residence.
As the family had long excelled in the art of soba making, the eighth-generation Seiemon—who became the first Nunoya Tahee—was encouraged by the lord of the time to establish the business.
He was granted the characters “Sara” (更) from Sarashina District in Shinano Province, his hometown, and “Shina” (科) from the Hosokina family name, to which he added the place name “Nagasaka” (永坂), thus adopting the name Nagasaka Sarashina.
