This is a slender Shinshu-style soba made from 80% domestic buckwheat flour and 20% domestic wheat flour. Our custom-blended flour is centred on hikigurumi-ko, where the entire buckwheat kernel (excluding the hull) is stone-ground, resulting in exceptionally aromatic noodles. It is characterized by its fresh flavour, firm koshi (al dente) texture, and smooth feel. Enjoy this authentic, high-quality soba easily at home. This soba also produces a rich sobayu (the hot water the soba was cooked in), which we highly recommend mixing with your dipping sauce to drink after your meal.
