By replacing traditional sansho with aromatic Sichuan peppercorns, this dish offers a refreshing fragrance and a gentle, lingering numbing sensation.
The natural umami of young dried anchovies harmonises beautifully with the sweet and savoury soy-based sauce, making it ideal not only with steamed rice but also for rice balls, ochazuke, or as a refined snack.
